My Traditional Tarte à la Provençale

Today, I want to share a recipe that is easy to prepare and absolutely delicious: my traditional Tarte à la Provençale. I learned this dish from my French great-aunt. Although I'm not sure if it's an officially traditional dish, it is a beloved family recipe and a true delight from Provence.

Ingredients
For the Dough:
300 g flour
A small French glass of water (80 ml)
150 g butter, diced
A pinch of salt
For the Filling:
French mustard
Black pitted olives
2-3 tomatoes
Herbes de Provence
Salt and pepper
Preparation
Prepare the dough: Knead the flour, salt, and butter with your fingers until it has a sandy consistency.
Add water: Add the water and form a ball.
Roll out: Roll out the dough (I like to do this directly on baking paper) and place it in a tart pan (or any round pan).
Apply mustard: Thinly spread the French mustard over the dough.
Distribute tomatoes and olives: Place the sliced tomatoes on top and add a few olives.
Season: Sprinkle Herbes de Provence, salt, and pepper over it.
Bake: Put the tart in the oven at 175°C until the crust is golden brown and the tomatoes are not burnt.
